Established in 2004, this unique experience revives the art of salting pilchards—a practice that once supported one of the largest sardine salting factories in the area until 1952. The school is open to everyone, welcoming children, locals, and tourists alike, regardless of prior experience.
During the program, which lasts about an hour and a half, participants learn how to properly salt, filet, and marinate pilchards under the guidance of local experts. All materials, including fresh pilchards, salt, and containers, are provided free of charge. The process involves arranging the fish in marked tin containers, following techniques passed down through generations. After the initial session, participants are invited to return with their canned fish to a festival on August 14, where the pilchards are tasted, judged, and celebrated.
The event is more than just a workshop—it’s a lively cultural gathering, often accompanied by live music, local cheese, and wine. Lectures on traditional canning methods and workshops on making traditional tools add depth to the experience.
